This is juice from Yamabudou grapes which grow high up on the mountainside near the town of Hachimantai ( Iwate Prefecture) in the north of Japan.
The grapes are picked before they are fully ripe. The completely natural juice, without any form of additive, preservative, colour or additional sugar, contains 8 times more poly-phenol, 3 times more iron and 4 times more vitamin C than other ordinary grapes.
Neither too sweet nor too sour, with a balanced acridness, it is considered and used as a VERJUICE. Reduced, it is perfect with slices of foie gras, Saint-Jacques scallops and other delicious foods ( vegetable marinade, vinaigrettes, sauces, fruit salads …).
In a more traditional way, dilute with sparkling water or milk to make a delicious cocktail. It's going to be very popular with pastry cooks ( for mousses, bavarois, creams…) and ice-cream makers (sorbets, ice creams).
