
Its Japanese name comes from its shape: “tosaka” = ridge. It is a large, thick, brilliant white seaweed.
It is a luxury seaweed, beautiful to look at, good texture, pleasant to chew and crunchy.
It honours seaweed salad and other vinegary salads, grated raw vegertables, sashimi garnish, soups and stock.
It is also a very decorative addition to a seafood platter.
As a garnish, rehydrate in a large quantity of cold water for 10 minutes then rinse and strain. It will increase in volume by about 6.
For soups and stocks, use it as it is, dried, it will rehydrate without difficulty.
White tosakanori is well known for its great nutritional value, fibre richness, calcium, magnesium, potassium, iron and carotene.
