Appetizer
Excellent for health, these little plums from the Japanese apricot tree, combine antiseptic, fortifying, mineralizing, alkalinizing properties... Their refreshingn fruity, sweet- sour taste is atypical, particular for neophytes, essential for connaisseurs. Here the plums have macerated in salt and then in red shiso (perilla frustecens). The fermented juice leaves a vinegar from which all the moisture is removed until crystallized and then ground into a powder.
