The shiso is an aromatic plant which has been grown in Japan since antiquity. It soon became popular in Japanese cooking. Shiso can be red or green.
Red shiso has traditionally been used to colour umeboshi plums, or, dried, to make condiments.
Green shiso is used as a herb. It's an obligation for sashimis (slices of raw fish), grated raw vegetable, home cooking, even tempura.
Shiso is rich in β-carotene, iron, potassium, magnesium, zinc… It is very rich in vitamins and essential minerals.
Considered as a medicinal plant in Japan, red shiso has aseptic properties (against allergies such as rhinitis and atypical dermatitis or anemia) or helps mental health.
These red shiso leaves will surprise you, first by their very aromatic, slightly acid, taste . They will inevitably remind you of vines in autumn, with a light cherry even blackcurrant nose.
