Literally translated as “shiso smile”, this is entirely hand made juice. 150 gr of shisos leaves are needed to make one 50 cl bottle. When the shiso is planted the seeds are rigorously selected and should produce a plant rich in polyphenols (natural antioxidants). They are harvested every day and the juice is made the same day. Only the youngest leaves are used because they are the least bitter. The SHISO NO HOHOEMI green shiso juice is made from green shiso. A perfectly controlled cooking process retains all the natural shiso flavours in this nectar.
Shiso juice has multiple applications. Very concentrated it can be used to dilute drinks (mineral or sparkling water, milk ) and cocktails, alcohol (shôchû, sake, gin ), in pastries (mousses, jellies, cakes, creams, ice creams and sorbets), in yoghurt & fromages blancs & faisselles, to flavour vinaigrettes, to colour and flavour vegetable purées (celery, cauliflower, potatoes), to marinate daikon (Japanese white radish) and black radish (over a complete night)…This juice has a very earthy, fresh nose with strong aromatic herb notes.
