
The shîkwâsâ is a small green lemon specific to the Okinawa archipelago.
The dark yellow juice is almost milky and quite thick. It's fresh in the mouth with a well-balanced acidity. The nose exhales a pleasant bitterness with a smell which characterises ripe lemons. There is no wincing but rather the satisfaction of tasting a boiled sweet with the acid notes of a lemon tart!
We offer 100 % natural juice, with no additive, preservative, colour nor additional sugar…The fruit is harvested in the village of Oogimison in the north of Okinawa, renowned for the longevity of its inhabitants. The shîkwâsâ is pressed whole, with the peel, and then immediately bottled and flash pasteurised cold.
It has multiple applications depending on the individual use. Adding it to honey will drive you crazy or by itself for cold drinks, syrups…
Make tartelets, mousses, bavarois, panna cotta, creams, flans, sorbets…everyone can find what they want.
Your imagination is the only limit! It's an excellent condiment for grilled fish and meat (it'll destroy the bad smells), to season vinaigrettes and mayonnaise, tabouleh and raw vegetables, tajines….
To perfect the pleasure don't forget to use it with gin, vodka, sake or shôchu or other Awamori (too much alcohol is dangerous for your health, enjoy wisely), on the rocks of course!
