The fleshy, perfumed Nanko Umé plums (the most well known in Japan) used for this miso are grown in an exceptional region : Kishu Minabé.
The plums are marinated in the miso and sugar for six, long months.
The delicate aroma and acidity of the fruit is generously diffused in the miso without the help of any additive. Everything is natural and healthy.
This miso, in Japan, is ideal to make vinaigrettes, sauces for frying oe meat or fish, even to accompany blanched vegetables (aubergine, white radish…)
On the western side, it is delicious on vanilla ice cream or peach sorbet…or an essential ingredient in meat or fish marinades. Combined with a ganache, chocolate makers will obviously be delighted.
