In the Tamba region of Kyoto, the red Azuki bean has been grown for more than a thousand years.

Amongst all the varieties, Tamba Dainagon is the best respected and also the most restricted: the quantity produced is very small but the beans are very large and their quality unequalled: the elegantly round beans are fleshy and shiny with a soft colour and an excellent, refined taste. It behaves excellently when cooked and its skin remains intact without breaking up. These particularities are in accord with the requirements of the Imperial Family and the best of pastry cooks.

Through the recipes included, Kyoto Kitao reveals all the art of preparing them.

Red azuki beans are mainly eaten whole, like a delicacy for the big ones ( 2l ), and in purée or a paste for the smaller ones ( L ). Red Azuki bean paste is widespread in the making of pastries, ice creams…
