
This is an essential kitchen utensil for all lovers of Japanese cuisine.
A shark skin grater. It is the traditional kitchen utensil used to grate fresh wasabi in Japan. However, fresh wasabi isn't that easy to find on the market because it's difficult to preserve ( maximum 10 to 15 days ). You'll be surprisedc when you use it as a zester.
Shark skin is very rough and when you rub fresh citrus fruit ( orange, lemon, lime ) or a hard vegetable( carrot, beetroot, celery…) against it you'll obtain a mixture with a very even consistency and no lumps. Only the zest of citrus fruit remains on the grater because the shark skin slides on the white part and therefore separates the rind from it's bitterness.
Remove what is left on the grater with a small toothbrush or hard bristled brush.
