Umibudô (Caulerpa lentillifera) is a species of green seaweed which resembles miniature bunches of grapes. The sea grapes we offer are grown and harvested in mineral rich sea water, drawn at a depth of 612 metres in the ocean near Kumejima.
The umibudô quality that we have selected is much appreciated in the producer prefecture of Okinawa. It is kept in deep-sea water and in this way retains its freshness and stability.
On reception, strain and soak immediately in quite cold clear water. If it is too salty, plunge it in clear water for another 4 minutes. Strain well and eat immediately. The grains crack as they are eaten freeing up a delicate taste of the sea.
The secret is to serve the seasoning apart (a ponzu for example or Marugoto Kokusan Chômiryo).
