This batter is very popular for serving chicken pieces in Japan. No additional seasoning is necessary. It can also be used for pork, lamb even fish and different vegetables.
It's really easy to use. Mix 200 gr Kara Age flour with 200 gr water. Mix well to obtain a consistent mixture and then add for example 1 kg deboned chicken legs cut into 30 to 40 gr cubes. Mix well. Put them into a deep fryer at 170/180°C. Once golden ( 4mn30 to 5m30 ), remove from the oil and place on absorbent paper. Leave to cool a little then eat!
