Appetizer
Literally translated by “shiso smile”, this juice is completely hand made. 150 gr of shiso leaves are needed to produce one 50 cl. bottle. At the shiso plantation, the seeds are rigorously selected and should produce polyphenol (natural antioxidants) rich plants. They are harvested every morning and the juice is made on the same day. Only the youngest leaves are used becasue they are not so bitter. SHISO NO HOHOEMI juice is made from red shiso (mainly) and green shiso. This mix gives it its freshness. A perfectly controlled cooking process ensures this nectar retains its natural shiso flavours. You'll be surprised by its cherry or wild cherry nose.
Perfectly suits
Shiso juice can be used in a multitude of ways. Very concentrated, dilute it to drink (mineral water, sparkling water, milk) in cocktails, with spirits (shôchû, saké, gin ), in dessertts (mousses, jellies, gâteaux, creams, ice creams and sorbets), in yoghurt & fromage blanc & faisselles, to season vinaigrettes, to colour and season vegetable puree (celery, cauliflower, potatoes), to marinate daikon (Japanese white radish) and black radish(over a complete night)…
