Nori is at the heart of Japanese cuisine, a superb seaweed harvested on the edge of the Ariake sea. Brushed with a seasoning from a traditional dashi stock of simmered kombu ( a secret guarded by Sanpuku Nori ) which is reduced for a complete day, developing a rich, melt in the mouth flavour.
