Yamecha is a green tea variety cultivated in Fukuoka Prefecture, South of Japan. Main ingredient of green yamecha tea paste is "sencha" green tea. Gyokuro green tea is also part of sencha teas but its flavor is much stronger and it contains much more tannin.
Sencha tea used for our paste contains a lot of catechin (natural phenol antioxidant), bringing bitterness. This typical vegetable and bitter taste, grassy, is very much appreciated for pastry and confectionnary use.

One major advantage when using this paste is the natural green tea colour remaining when cooking or making pastries, which, honestly speaking, is very much complicated with all other kind of tea or tea products existing on the market. Thanks to technologies developped by Zero Once Company, fresh pastries and creams processed which Yamecha green tea paste will preserve their natural green colour during 3 days, even if products are stored under day light condition in refrigerated window.
