Our funori seaweed, rigorously and carefully selected by the  Esan Seaweed Fishermen Association, take you on a trip along the wild Hakodate coastline, delicately filling your nostrils with the smell of spray and sea.

Funori is harvested in springtime and summer and immediately washed and dried at high temperature in record time to conserve the smell, aroma and taste.

Traditionally, the Japanese have it in miso soup.

For our western palate, we advise you to rinse it thoroughly, plunge it into boiling salted water for 30 seconds then rinse it in cold water and dry.

Afterwards you can eat it with a light vinaigrette or, even better, our kanisu seafood vinegar. In this way you will appreciate their crunchiness and delicate taste of the sea.
