This seaweed comes from the Sanriku region on the Pacific coast, north east of Japan, which is famous for the quality of its seafood.
This wakame is the complete opposite of the numerous low quality products available on the market. It's very tasty, thick, has a pleasant texture in the mouth and is nicely crunchy.
It goes well with seaweed salad, grated raw vegetables or vegetables, sashimis ( thin slices of raw fish), meat or fish carpaccios, or stock…
For soups and stocks, use it as it is, dried, and it will rehydrate without difficulty.
Asa garnish, just rehydrate in a large quantity of cold water for 5 minutes then strain and rinse. It will increase in volume by about 12.
