Appetizer
Harvested green in just one week in May, Kaneichi sansho grape berries (sometimes called lemon pepper) are recognised by their inimitable fruity taste, a delightful combination of lemon balm, lemon and mint over very peppery, spicy notes.
This berry is in fact a citrus fruit because it belongs to the rutaceae family.
Eaten as it is it leaves a slightly anaesthetic sensation on your tongue with a sparkling tingle.
Sansho has been used as a natural preservative for meat and fish since antiquity, preventing unpleasant smells and deterioration and afterwards to stimulate appetite. Its elegant fragrance and special spicy taste has made it an essential condiment, spice for Japanese cuisine today.
This little jam is perfect with Saint-Jacques scallops, bass or codfish, veal fillet or cushion...
