
There are numerous varieties of black soya bean in Japan and in Asia in general. This variety Nishikidori Market has selected, called Shin Tambaguro, is the top of the tops. They are big, perfectly round beans with a very soft and consistent texture, a delicate flavour and are naturally sweet. This exceptional quality is due to the conditions around Hokkaido : red soil, very pure water, large temperature differences throughout the seasons. It is only possible for this variety to develop perfectly in this region and the number of farms growing it is very small. Moreover, its cultivation is handed down from generation to generation. Its unanimously recognized, very special flavour made for the creation of the "Shin Tambaguro" label in 1981, restricting its cultivation to a small number of growers. The Shin Tambaguro soya bean is seen as the best in the world.
The product we are offering has been delicately roasted. Its crispy, crunchy texture is very pleasant to eat, like dried fruit ( almonds, nuts) without the oily side.
It has a full flavour easily evaluated as of use in pastry making, with chocolate. Crushed or reduced to powder, it is perfect with fruit, meat and fish but also with fresh fruit and ice cream…
